Edit poisson:/var/aliases/forward.list, locate the line for the user concerned, and change the final field to point to the desired mail server.

If this file is edited then it must be rebuilt preferably by letting cron take care of it overnight, or by running as root:
poisson# make
Even when this works it produces error messages, so check with Chris or Bel that it has worked.
